Cheddar Mashed Potato and Ham Bake

Ingredients:

Directions:

  1. Butter a 2 1/2 to 3-quart baking dish. Heat oven to 350 degrees.
  2. Melt butter in a skillet over medium-low heat. Add the celery and onion and saute, stirring frequently, unitl the vegetables are tender. Add the ham and contiue cooking until ham is slightly browned. Stir in soup, 1/2 cup milk, and add salt and pepper to taste.
  3. If the mashed potatoes are cold, warm them to make easier to mix. Whisk together the eggs and milk and beat into the potatoes along with the green onions and parsley. Keep about 1/3 of the cheese for topping and add the rest to the potato mixture.
  4. Spoon the ham mixture into the baking dish. SPread potatoes over ham mixture and top with the reserved cheese. Sprinkle with a little freshly ground black pepper. Bake about 40-50 minutes, until lightly browned.
