Cheddar Grits Casserole With Tomatoes And Green Ch...

Ingredients:

  1. Put first four ingredients in a medium saucepan, whisk well to mix and bring to a boil. Turn to low heat and cook for about 25 minutes or according to directions on grits package. Stir often, making sure that the grits don’t clump at the bottom of the pan. When done set aside to cool slightly.
  2. Meanwhile mix remaining ingredients in a medium bowl and set aside. Add a cup or so of the warm grits and beat to combine. Then add remaining grit mixture and mix together. Pour into a greased dish or two and bake in a preheated oven set to 375 degrees. Bake for 30 to 40 minutes till lightly browned on top and set in the center. Don’t over bake, but make sure center doesn’t jiggle.
  3. Serve warm as a side dish or with a salad as a light meal.
