Cauliflower And Spinach Salad

Ingredients:

  • 3 cups cauliflower
  • 1/2 lb spinach
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1/2 tsp dried basil
  • 1/4 tsp pepper
  • 1/2 cup slivered almonds

Directions:

  1. Rinse and drain cauliflower then cut into small flowerets.
  2. Wash and trim spinach then stack leaves and slice crosswise into 1/4 strips.
  3. Place spinach in salad bowl along with cauliflower then cover and refrigerate until serving time.
  4. In jar combine oil, vinegar, garlic, salt, mustard, basil and pepper.
  5. Shake to blend well then just before serving pour dressing over vegetables.
  6. Add almonds and mix gently but thoroughly.
