Cattlemen's Club Twiced Baked Potatoes

Ingredients:

Directions:

  1. Bake potatoes for 1 hour in at 350°F or until tender in center.
  2. Cut potatoes in half lengthwise and scoop out potato being careful not to tear skins.
  3. Mash potatoes with electric mixer, adding half and half and beating until smooth.
  4. Add remaining ingredients and mix well.
  5. The mixture will be some what softer than regular mashed potatoes.
  6. Fill potato shells with the mashed potato mixture and place on cookie sheet.
  7. Top each potato half with extra grated cheddar cheese.
  8. Bake an additional 20 minutes at 350°F.
