Capsicum Pasta

Ingredients:

  • 100 g pasta
  • 2 cloves garlic
  • 70 g cherry tomatoes
  • 1 tbsp capers
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 pinch of salt
  • 1 pinch of pepper

Directions:

  1. Cook pasta till al dente
  2. Chop red capsicum in small quarters
  3. Mince garlic
  4. Quarter the tomatoes
  5. Chop the already washed lettuce
  6. Heat oil in a medium heat in a pan
  7. Sauté garlic for a minute
  8. Sauté capsicum
  9. Sauté capers
  10. Cook in tomatoes and stir for 5 minutes
  11. Stir in the pasta, lemon juice and water from boiling the pasta
  12. Put salt and pepper
  13. Let it simmer in a low heat for a minute or two
  14. Serve hot with fresh minced parsley
