Pasta with light sauce made of capsicum, capers, parsley and cherry tomatoes.
Ingredients:
100 g pasta
50 g red capsicum
2 cloves garlic
70 g cherry tomatoes
5 leaves romaine lettuce
1 tbsp capers
1 tbsp olive oil
1 tbsp minced parsley
2 tbsp lemon juice
1 pinch of salt
1 pinch of pepper
Directions:
1. cook pasta till al dente
2. chop red capsicum in small quarters
3. mince garlic
4. quarter the tomatoes
5. chop the already washed lettuce
6. heat oil in a medium heat in a pan
7. sauté garlic for a minute
8. sauté capsicum
9. sauté capers
10. cook in tomatoes and stir for 5 minutes
11. stir in the pasta, lemon juice and water from boiling the pasta
12. put salt and pepper
13. let it simmer in a low heat for a minute or two
14. serve hot with fresh minced parsley
