Cajun Sweet Potatoes

Ingredients:

  • 6 to 8 slices of japaleno peppers (chopped into pieces add to mashed sweet potatoes)
  • 1/4 cup brown sugar
  • 1/4 cup steen's cane syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 2 large eggs
  • 1 can (12oz) evaporated milk
  • optional : pecan slices...

Directions:

  1. Beat together first seven ingredients with mixer at medium speed
  2. Beat in milk gradually
  3. Pour into a 9 inch square baking dish
  4. Bake at 375 degrees about 35 minutes, or until knife inserted in center comes out clean. Then remove from oven
  5. Top with marshmallows and return to oven for about 12 minutes, or until marshmallows are puffed and browned
