Brussels Sprouts Extraordinaire

Ingredients:

  • 1 small onion, sliced
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 (10 oz) packages frozen brussels sprouts

Directions:

  1. In a skillet, saute onion in butter until tender. Remove onion and set aside.
  2. Blend flour into the drippings.
  3. Add tomato juice; cook and stir over low heat until thickened and smooth. Stir in the sugar, salt, pepper and onion.
  4. Arrange the brussels sprouts in a greased 1 quart baking dish; top with the tomato sauce.
  5. Sprinkle with cheese.
  6. Bake, uncovered, at 350 degrees for 15 minutes.
