Brussel Sprout “cole Slaw”

Ingredients:

  • 1 bell pepper of your choice (i used two small ones from my garden)
  • 1 tbsp olive oil
  • 1 tbsp vinegar of your choice
  • opt: onion, dried cranberries, or/and fresh shaved parmesan cheese or any other fresh peppers you''d like to add

Directions:

  1. Slice/shred sprouts and shred carrot.
  2. Dice peppers and onions to the size of your choice.
  3. Mince parsley.
  4. Toss everything together and top with a parsley sprig.
