Brussel Sprout “cole Slaw”

fresh, simple cold salad to snack on or to accompany any meal.
Ingredients:
1lb fresh brussel sprouts
1 bell pepper of your choice (i used two small ones from my garden)
1 carrot
2 tbs fresh parsley
juice of 1 lemon and 1 lime
1 tbs olive oil
1 tbs vinegar of your choice
salt & pepper
opt: onion, dried cranberries, or/and fresh shaved parmesan cheese or any other fresh peppers you’d like to add
Directions:
1. slice/shred sprouts and shred carrot.
2. dice peppers and onions to the size of your choice.
3. mince parsley.
4. toss everything together and top with a parsley sprig.
