Brother Bills  Blueberry Coffee Cake

Ingredients:

  • 1/3 cup plus 2 tbsp oil (used as separate times)
  • 3/4 cups milk
  • 1 egg
  • 1/2 tsp lemon extract
  • 1 3/4 cups flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts or pecans or both
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup flour

Directions:

  1. Beat together 1/3 cup oil, milk, extract and egg.
  2. Mix in the flour, sugar, salt and baking powder.
  3. Add 1 cup of the blueberries.
  4. Pour into a greased 9 inch square or round pan.
  5. For the topping mix the nuts, brown sugar, cinnamon and flour.
  6. Sprinkle the topping over the batter.
  7. Drizzle over the topping, 2 Tbsp. oil.
  8. Sprinkle over the last cup of blueberries.
  9. Bake in 375 degrees for 45 - 50 minutes or whenever done or toothpick comes out clean.
