Brocoli And Bacon Baked Potato

Ingredients:

Directions:

  1. Preheat oven to 375F
  2. With a fork, poke 8 to 12 deep holes all over each potato so moisture can escape during cooking
  3. Place potatoes on a baking sheet and coat potatoes lightly with cooking spray
  4. Sprinkle with kosher salt and place baking sheet directly on rack in middle of oven
  5. Bake for 1 hour or until skin feels crisp but flesh beneath feels soft
  6. Remove from oven and let cool
  7. Once cool to the touch cut a slit down the middle of each potato
  8. Serve topped with a dollop of yogurt, some broccoli florets, crumbled bacon and halved cherry tomatoes
