Low-fat Apple Cinnamon Muffins

Ingredients:

Directions:

  1. Heat oven to 375.
  2. Spray only the bottoms of 12 medium muffins cups with nonstick spray.
  3. In a large bowl, beat milk, yogurt, egg whites, egg, vanilla and lemon zest.
  4. In a separate bowl, combine flour, sugar, cinnamon, baking soda and baking powder.
  5. Fold dry ingredients into wet until just moist.
  6. Stir in apple.
  7. Divide batter among muffin cups.
  8. Bake 18 to 20 minutes or until toothpick inserted in center comes out clean.
  9. Immediately remove from pan and cool on wire rack.
