Ingredients:

Directions:

  1. Sauté onion in butter. Set aside.
  2. Cook melted butter and flour using a whisk over medium heat for 3- minutes.
  3. Stir constantly and add the half & half.
  4. Add the chicken stock.
  5. Simmer for 20 minutes.
  6. Add the broccoli, carrots and onions.
  7. Cook over low heat 20-25 minutes.
  8. Add salt and pepper. Can be puréed in a blender but I don't.
  9. Return to heat and add cheese.
  10. Stir in nutmeg.
