Broccoli and Wasabi Dip

Ingredients:

  • 1 bunch broccoli
  • 1/2 onion
  • 1 tbsp butter
  • 1 1/2 tsp salt
  • 3/4 tsp wasabi powder

Directions:

  1. Cut the broccoli into florets and cook in boiling salted water until tender. Refresh under cold running water and drain well.
  2. Peel and finely dice the onion.
  3. Melt the butter in a small frying pan, add the diced onion and cook over a low heat until soft but not coloured.
  4. Place the drained broccoli, cooked onion and cheese in a food processor. Blend until smooth.
  5. Add the salt, wasabi powder and lemon juice. Blend until well mixed, then check the seasoning.
  6. Cover and refrigerate until ready to serve.
