Broccoli and Rice in Egg Tortillas.

Ingredients:

Directions:

  1. Cook rice and broccoli according to package directions.
  2. Mix with cheese,corn nuts, cilantro,half of the chili powder, half the oregano and half the salt.
  3. In a pie plate beat eggs with remaining spices.
  4. In a non stick skillet,heat 1 tablespoon of the oil over medium heat.
  5. Dip 2 tortilla in egg mixture. place in hot skillet. add two more tablespoons of mixture and then cook til slightly browned.
  6. Place a bit of mixture in tortillafold over and press.
  7. Repeat making 3 more tortillas.
