  1. Prepare your tortillas:.
  2. Set tortillas aside neatly, and place cheese on each.
  3. Scramble eggs:
  4. Heat pan and add oil. When oil is hot, scramble the eggs.
  5. Once eggs are done, divide and put on top of cheesy tortillas.
  6. Carefully place tortillas on pan and fold over, pressing gently.
  7. Once cheese is melted (about 2 minutes) remove from pan and allow to cool slightly. Add salsa on side if desired, serve, and enjoy!
