Bow-Tie Pasta with Chorizo & Tomatoes

Ingredients:

  • 12 oz pasta
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 8 oz chorizo

Directions:

  1. Cook pasta in lightly salted boiling water as package directs.
  2. Meanwhile, heat oil in a large skillet over medium heat. Add garlic; saute until fragrant. Add chorizo; saute until browned. Add tomatoes and crushed red pepper; cook 1 minute or until tomatoes being to release their juice. Remove from heat.
  3. Ladle off 1/3 cup of pasta water. Drain pasta; return to pot. Add chorizo mixture and cheese; mix gently, adding reserved pasta water as needed to make saucy.
