Black Bean Soup

Ingredients:

  • 1 pint black beans
  • 2 quarts water
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 tbsp butter
  • 1 1/2 tsp flour

Directions:

  1. Wash and soak beans overnight in 2 quarts water.
  2. In the morning add onion and simmer until beans are soft.
  3. Add more water if necessary.
  4. Rub through a sieve and re-heat.
  5. Add seasoning and butter and flour rubbed together.
  6. Just before serving add thin slices lemon and egg.
