Ingredients:

  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 tsp of vanilla
  • pinch of salt
  • 1 1/2 cup of all purpose flour
  • 1/2 cup orange juice
  • opitonals
  • bakers joy or another nonstick spray

Directions:

  1. Soak banana chips in orange juice until they have re- hydrated. Depending on how many it may take up to 30 minutes and depending on how well your dehydrator worked, if you DIY.
  2. Preheat the oven to 350°F
  3. With a wooden spoon, or hand mixer if you just really don’t wanta work that hard mix butter into the bananas soaked orange juice in a large mixing bowl. I don’t drain the orange juice off being it really is not that much left over.
  4. Mix in the sugar, egg, and vanilla.
  5. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix.
  6. Spoon mixture into a buttered or sprayed 4x8 inch loaf pan.
  7. Bake for 1 hour.
  8. You may wish to smother on more of the orange juice. This works wonders if you forgot and over baked or someone doesn’t have all their teeth.
  9. Cool on a rack. Remove from pan and slice to serve. Above all enjoy..
  10. You may wish to add nuts or some other desirable fruit. Pecans and walnuts are plentiful for me, as are some of the wild fruits in summer such as blackberries, and are a nice fall treat persimmons.
