Banana Orange Nut Bread

Ingredients:

  • 2 1/2 cups sifted all-purpose flour
  • 3/4 tsp salt
  • 1/2 cup shortening
  • 3 eggs
  • 1/2 cup orange juice
  • 3/4 cup sugar
  • 1/2 cup mashed banana

Directions:

  1. Preheat oven to 350. Lightly grease and flour one 9x5x3 loaf pan.
  2. Sift together flour, baking powder and salt. Stir in chopped nuts, and dried cranberries. Set aside.
  3. Cream shortening, add sugar, beat until light and fluffy. Add eggs, one at a time, beating after each addition. Add mashed banana and orange juice.
  4. Slowly beat the set aside dry ingredients into creamed mixture. Mix well.
  5. Pour into prepared loaf pan.
  6. Bake at 350 degrees for 70-75 minutes.
  7. Cool 25-30 minutes before removing from pan.
