  1. Preheat the oven to 350°F Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Add baking soda and and mix. Add the flour and mix. Pour mixture into muffin tin. Bake 25 to 35 minutes until golden brown and a toothpick inserted in the center comes out clean.
