Ingredients:

  • 1/4 cup wheat bran
  • 3/4 cup milk
  • 1 egg
  • 1/8 tsp salt
  • 1/4 cup vegetable oil
  • 1/3 cup sugar
  • 1/2 cup walnuts
  • 1/2 cup banana

Directions:

  1. Preheat oven to 400F.
  2. Grease Muffin tin.
  3. Mix all dry ingredients except nuts.
  4. Beat egg and add to dry ingredients along with oil, milk and pulverized banana.
  5. Blend and add nuts.
  6. Scoop into muffin tin, dividing the mixture evenly amongst the muffin cups.
  7. Bake for 20 mins.
  8. Cool and enjoy.
