Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 4 tsp milk
  • 1/2 tsp salt
  • 1 1/2 cups flour
  • 1 tsp vanilla
  • 1/4 tsp cinnamon

Directions:

  1. Cream sugar and shortening. Add beaten egg and mix until fluffy. Add mashed bananas, milk and vanilla. Beat until well mixed.
  2. Sift soda, salt, cinnamon and flour together. Add to banana mixture; beat only until dry ingredients are moistened. Flour and grease muffin tins. Bake at 350 F for 20 to 25 minutes. Makes 12 muffins.
