Ingredients:

  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp salt
  • 3/4 cup pecans

Directions:

  1. Preheat oven to 350 degrees.
  2. Mash bananas with sugar and let stand 5 minutes.
  3. Sift together flour, baking soda, and salt.
  4. Cream butter into banana mixture. Add eggs one at a time and blend well. Add vanilla.
  5. Slowly add in flour mixture. Add nuts if desired. Do not over-mix!
  6. Pour batter into greased loaf pan and bake for 55 minutes or until a toothpick comes out clean.
