Baked Carrots With Swiss Cheese and Bacon

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Bring a large saucepan of water to a boil.
  3. Add carrots and cook for 5-7 minutes, or until carrots are crisp-tender.
  4. Plunge into ice water to stop cooking.
  5. Layer half of carrots in a 2-quart baking dish.
  6. Cover with 3 slices Swiss cheese.
  7. Repeat with remaining carrots and cheese slices.
  8. In medium saucepan, melt butter over medium heat.
  9. Add onion and cook for 2 minutes, or until soft.
  10. Sprinkle flour, salt and chili powder over onions.
  11. Cook for 1 minute, stirring constantly.
  12. Add milk and cook for 10 minutes, stirring until thickened.
  13. Pour sauce over carrots and cheese.
  14. In small bowl, combine bread crumbs, bacon and melted butter.
  15. Sprinkle evenly over carrots and sauce.
  16. Bake for 25 minutes.
