Bacon Rice Cayman Islands Style Recipe

Bacon Rice Cayman Islands Style

Ingredients:

  • 6 -10 slices bacon
  • 1 small onion
  • 1 tbsp butter
  • 1 tsp sugar
  • 1 cup rice , par boiled
  • 1 1/2 cups water

Directions:

  1. Chop bacon to bacon bits.
  2. Chop water chestnuts to little cubes.
  3. Cook the diced bacon with onions until tender.
  4. Separate the bacon and the bacon grease.
  5. Combine the bacon grease, butter and water in separate pot.
  6. Cook rice for 15 minutes as normal.
  7. This allows the bacon flavour into the rice.
  8. Combine cooked rice and remaining ingredients (chopped water chestnuts, chopped bacon, onions and pineapple).
  9. Salt and pepper to taste.
  10. Serve with ham or beef.
