Avocado Orange Salsa

Ingredients:

  • 1 1/2 lb oranges
  • 1 cup english cucumber diced in 1/4 inch pieces
  • 2 tbsp lime juice
  • 1 tsp chipotle chile puree (puree canned chipotles, it's that easy!)
  • salt to taste

Directions:

  1. Cut ends off oranges, then cut off peels and outer membranes and discard.
  2. Slice oranges 1/2 inch thick and then into cubes, discard seeds. Place oranges into bowl.
  3. Pit, peel and dice avocados and add to oranges. Add cucumber, onion, lime jice and chipotle puree, adding salt to taste.
