Aunt Barbs Blueberry Cake

Ingredients:

  • 2 large eggs
  • 2 scant cups of flour (toss berries with a bit of this flour)
  • 1 tsp lemon or vanilla
  • 1 1/2 cup sugar
  • optional extras from her daughter, leslie
  • another 1/2 cup blueberries or
  • 1/2 cup chocolate chips or
  • 1 tsp cinnamon sifted with the dry ingredients
  • note: use separately or combine those you like

Directions:

  1. 325 oven Greased 8 or 9 pan
  2. Melt butter in a measuring cup and cool
  3. Break eggs into cup and fill with milk to make 1 cup
  4. In a large bowl, sift together dry ingredients
  5. Add egg mixture and mix well, add flavorings and mix well
  6. Gently fold in blueberries
  7. Bake for 30 - 35 minutes or until toothpick inserted in center comes out clean
