Ingredients:

Directions:

  1. Cook rice according to package directions omitting the butter and cool
  2. Drain artichokes (reserve the liquid) and chop
  3. Mix mayo, artichoke liquid, and curry powder in a bowl.
  4. In a large bowl mix rice, pepper, onion, olives, and artichoke pieces.
  5. Pour mayo mixture over the rice and veggie mix and toss to mix well.
  6. Chill for 4 hours or over night.
