Artichoke Rice Salad

easy and delicious side can be used as a side dis or a salad. make te day before.
Ingredients:
2 packages of rice-a-roni chicken flavor
3/4 cup chopped green pepper
8 green onions chopped
16 stuffed olives with pimento sliced
2 6 oz jars marinated artichoke hearts chopped
2/3 cup real mayonnaise
1 teaspoon curry powder (optional.. but it adds alot of flavor)
Directions:
1. cook rice according to package directions omitting the butter and cool
2. drain artichokes (reserve the liquid) and chop
3. mix mayo, artichoke liquid, and curry powder in a bowl.
4. in a large bowl mix rice, pepper, onion, olives, and artichoke pieces.
5. pour mayo mixture over the rice and veggie mix and toss to mix well.
6. chill for 4 hours or over night.
