Ingredients:

Directions:

  1. Separate onion into rings and fry in olive oil until golden brown.
  2. Add string beans, eggplant and tomatoes then cover and simmer 30 minutes.
  3. Uncover and add salt.
  4. Cook until beans are tender and most of the liquid has evaporated.
  5. Pour into a bowl and chill thoroughly then add dressing.
