Ingredients:

Directions:

  1. Heat the oil in a large saucepan over medium heat.
  2. Heat the onion, celery and red pepper.
  3. Saute, stirring often.
  4. Stir in the garlic and chili powder.
  5. Saute 1 minute longer.
  6. Add the tomatoes with their liquid, stock and peanut butter to the sauceoan.
  7. Bring to a gentle simmer.
  8. Stir in the rice and chicken.
