2 Egg Veggie Omelet

Ingredients:

  • 2 large eggs
  • 1/2 medium onion
  • 1 tbsp olive oil

Directions:

  1. Saute veggies, remove from pan
  2. Pour in scrambled eggs
  3. Let cook for a few minutes, scramble eggs a little
  4. Add veggies to one side
  5. Add cheese
  6. Flip other side over veggies and cheese
