Directions:

  1. In small pan over medium heat, cook onion and pepper a few minutes. or until as soft as you like.
  2. Meanwhile beat egg, milk, salt and pepper, and garlic powder.
  3. Pour egg into skillet, move to keep from burning, (just like regualr scrambled eggs)
  4. On each flour tortilla, spread sour cream in a line, add salsa on top. place tomatoes in a line beside sour cream.
  5. Place half of cooked egg-veggie mixture on top of sour cream/salsa. tuck up end, roll burrito style. makers two, which is handy.
  6. You can also do the egg/vegies pritatta style, and cut fingers to place in the burritos. this is a great breakfast to push into the hands of busy children, or businessmen/women who often forget breakfast.
