Zucchini Fritters

Ingredients:

Directions:

  1. In a bowl, add zucchini, eggs, salt, pepper, parsley and cheese.
  2. Mix to blend.
  3. Add just as much flour as is needed for the fritters to hold shape when dropped in hot oil. (Too much flour is just too much flour!)
  4. Heat about 1/2-inch of oil in a skillet.
  5. Drop by spoonsful into hot oil and brown evenly.
  6. Drain on a paper towel.
  7. Can serve sour cream seasoned with paprika for dipping.
  8. These can also be made early and re-heated in the oven or even frozen and thawed and re-heated.
