Ingredients:

Directions:

  1. Microwave zucchini on HIGH 6 minutes, turning after 3 minutes. Remove.
  2. Place onion and 1 tsp butter in small bowl, cover, and microwave on HIGH 3 minutes or until onionjs are tender-crisp.
  3. Cut zucchini in half lengthwise and scoop out flesh with spoon, leaving shell about 1/4 thick. Add pulp to onion mixture with remaining butter, bread crumbs, cheese, parsley, salt, pepper and egg.
  4. Stuff zucchini shells and microwave on HIGH 8 - 10 minutes or until shells and stuffing are cooked. Sprinkle with paprika or garnish with cherry tomatoes to serve.
  5. Note: Cherry tomatoes will change nutrition values.
