Zucchini and Spinach Low Fat Casserole

Directions:

  1. Saute onion and garlic in light olive oil
  2. Add and cook down spinach
  3. Put in baking dish
  4. Add and mix in cottage cheese
  5. Cover with sliced zucchini
  6. Cover with basil leaves
  7. Cover with sliced tomato
  8. Add sea salt and fresh ground pepper to taste
  9. Top with grated parmesean
  10. Bake at 350
  11. 45 minutes
