Zucchini and Spinach Low Fat Casserole

Low Fat, low carb side or main dish
Ingredients:
1/2 red onion
6 cloves of garlic
16 oz fresh spinach
8 oz fat free cottage cheese
4 medium zucchini
2 med tomatoes
15 leaves fresh basil
1 teaspoon olive oil
2 tablespoons fresh grated parmesean cheese
Directions:
1. saute onion and garlic in light olive oil
2. add and cook down spinach
3. put in baking dish
4. add and mix in cottage cheese
5. cover with sliced zucchini
6. cover with basil leaves
7. cover with sliced tomato
8. add sea salt and fresh ground pepper to taste
9. top with grated parmesean
10. Bake at 350
11. 45 minutes
