Yummy Yam Casserole

Ingredients:

  • 3 cups boiled yams, drained and mashed (or 1 large can of yams)
  • 2 eggs
  • 1/2 cup butter
  • 1 tsp vanilla
  • 3/8 cup butter
  • 2/3 cup flour

Directions:

  1. Preheat oven to 350.
  2. Whip together yam ingredients and pour into a 9x13 glass baking dish.
  3. Mix topping ingredients until it resembles coarse crumbs and drop over top of yam mixture.
  4. Bake for 30 minutes.
  5. To freeze: Assemble casserole as directed up to the point of baking. Cover well with foil. Label and freeze.
  6. To serve: Thaw in fridge, uncover and bake as directed.
