Ingredients:

Directions:

  1. Season chicken with salt and pepper.
  2. Lightly coat a large nonstick skillet with cooking spray.
  3. Add olive oil and heat.
  4. Add chicken breasts and cook over medium heat until browned and juices run clear, around 5 minutes on each side.
  5. Add onions, peppers and garlic to skillet.
  6. Cook until vegetables are softened.
  7. Stir in wine and tomatoes.
  8. Bring to boil, then reduce heat to medium-low.
  9. Cover and simmer 20 minutes.
  10. Sprinkle with parsley and serve with pasta.
