Ingredients:

  • 1 cup. sugar
  • 1/2 cup. shortening
  • 2 eggs
  • 1 1/4 cup. mashed bananas
  • 1 1/4 cup. flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1/2 cup. chopped nuts , if desired

Directions:

  1. Cream sugar and shortening, add eggs and bananas. Mix well.
  2. Stir in flour, salt, soda and nuts until blended thoroughly.
  3. Bake 1 hour in 9 x 5 inch pan, greased and floured at 350 degrees.
  4. Cool in pan 10 to 15 minutes, then invert on wire rack to cool.
  5. Can also be baked in 3 mini-loaf pans for 20-25 minutes.
