Ingredients:

Directions:

  1. Put all of the ingredients, except pecans and parsley, in a bowl.
  2. Beat with a mixer at medium speed until mixture is fluffy.
  3. Stir in 3 Tbs. pecans; cover and refrigerate 4 hours.
  4. Mix the remaining pecans and parsley in a small bowl.
  5. Form cheese into one large ball or several small balls.
  6. Roll in the pecan/parsley mixture.
  7. Return to the refrigerator until chilled.
  8. To Freeze: wrap in plastic wrap.
  9. Approximately 30 minutes before you are ready to serve, unwrap cheese.
