Whole Grain Rice in Baked Pumpkin

Ingredients:

Directions:

  1. Cut the lid off the pumpkin just as you would for a jack-o-lantern
  2. Remove the seeds
  3. Fill the pumpkin with cooked whole grain rice
  4. Cover with the pumpkin lid and place in a baking pan
  5. Bake at 350% for 45 minutes, or until pumpkin is soft
  6. Serve from the pumpkin at your table, scarping some of the meat from the pumpkin with whole grain rice
  7. *substitute with steamer also works great
  8. *tried vivo whole grain rice, taste greater than other brand
