White and Wild Rice Pilaf With Tomatoes and Basil

Ingredients:

Directions:

  1. Melt 1/4 cup butter in heavy large pot over medium heat.
  2. Add onions, garlic, and oregano.
  3. Cover; cook until onions are soft, stirring often, abaout 8 minutes.
  4. Mix in wild rice.
  5. Add 7 cups of water, bring to a boil, stirring often.
  6. Reduce heat to medium-low.
  7. Cover; simmer 30 minutes.
  8. Mix in white rice.
  9. Cover and cook until rice is tender, about 18 minutes.
  10. Uncover and cook until water cooks away, about 4 minutes.
  11. Add green onions, basil and 1/4 cup butter.
  12. Season with salt and pepper.
  13. Mix in tomatoes.
