Wheat Berry Salad With Fruit & Feta

Ingredients:

Directions:

  1. Starting with about 7 Cups of water, boil wheat for 1 hour, keeping the water level about an inch above the wheat. (You will need to add water periodically.).
  2. Roast Almonds by baking on a cookie sheet or pan at 400* for 10 minutes, stirring/flipping after 5 minutes. Set aside to cool, then chop to desired size.
  3. Peel and cut apples, finely grate orange zest, juice orange (chunks in the juice are okay.).
  4. When wheat is done boiling (it should have a tender, rubbery consistency), drain and rinse with cold water. Drain well.
  5. My feta was herb-soaked in a garlic, olive oil, lemon juice, rosemary, dill mix. It adds a lot to the salad.
  6. Mix everything together. You can serve it right away, but it gets even better the next day.
