Warm Zesty Salad

Ingredients:

  • 1 punnet (1&1/2 cups) cherry tomatoes halved
  • 2 tbsp of olive oil
  • 3 tbsp lemon juice
  • 1 tbsp lime juice
  • 250g seafood highlighter (optional)
  • 1 tbsp vegeta spice

Directions:

  1. Place Shredded Lettuce, halved Cherry Tomatoes, diced cucumbers and seafood highlighter(optional) in a large salad bowl.
  2. Add lemon and lime juice, stir through and set aside.
  3. Put diced potatoes in a microwave proof bowl, cover with boiling water and cook on high for 5mins.
  4. Strain potatoes then add to a frypan. Sprinkle Vegeta Spice over the potatoes, Lightly fry on a medium heat in Olive Oil until Golden brown. Then add to the Salad Bowl.
  5. Cook Pasta as packet directions strain and add to the Salad Bowl.
  6. Lighty toss Salad until mixed evenly, serve immediately with steamed fish or BBQ'd chicken Breast Fillet.
