Ingredients:

Directions:

  1. Cook and drain pasta as per package instructions.
  2. Meanwhile, in a skillet, heat olive oil over medium heat.
  3. Cook onion in oil for about 2 mintes, stirring frequently.
  4. Add garlic, vinegar, veg. Oil, tomatoes and chicken.
  5. Cook2 to 3 minutes, stirring occasionally, until hot.
  6. Stir in spinach and cook until it starts to wilt.
  7. In large serving bowl, toss pasta with chicken mixture.
  8. Top with cheese.
