Venetian Inn Baked Haddock

Ingredients:

  • 1/2-3/4 cup flour
  • salt and pepper
  • 2 tbsp olive oil
  • 1 cup hot water
  • 1 lemon , juice of
  • 2 tsp paprika

Directions:

  1. Rinse haddock well under cold water while still frozen.
  2. Preheat oven to 375 degrees.
  3. Mix flour with salt and pepper.
  4. Lightly dust each fillet with mixture.
  5. Lay fish in baking dish and brush top of each piece with olive oil.
  6. Mix hot water, bay leaves and lemon juice and spritz fillets with mixture.
  7. Sprinkle fillets with paprika for color.
  8. Bake for 30 minutes or until fish is firm.
  9. Remove from oven and transfer to serving platter.
  10. Pour melted butter over each piece before serving.
