Vegetarian Stuffed Bell Peppers

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Heat oil in a medium pan. Saute garlic and onion until onion is transucent.
  3. Add dried tomatoes,minced bell pepper,and breadcrumbs and saute until the bell pepper is softened.
  4. Add canned tomatoes a little at a time, allowing the liquid to be absorbed before adding more. Then add the pepper and mustard.
  5. Spoon mixture into the halved bell peppers, top with grated cheese, and bake for 10 minutes at 350 degrees.
  6. Top with parsley if desired.
  7. Note: I consider each half pepper to be two servings.
